Dressing:
Cut the cherry tomatoes in halves. Cut the avocado in dices. Peel the lotus and cut in thin slices. Slice the mushrooms. Cut the pomegranate in 2 halves and remove the seeds. Cut the asparagus and sugar snaps in small pieces.
Put it all in a bowl and the salad is ready to serve. Add the dressing on top if you like.
*You can buy fresh lotus in Asian supermarkets.
